Chef Paul Cunningham trained in prestigious British restaurants and country house hotels and earned a Michelin star at The Paul in 2003. During his years working in England, he fell in love with a Danish girl and, ready for a simpler, healthier way of living, he followed her home to Denmark.
Since 2012, Paul has been the head chef at Henne Kirkeby Kro, where he makes full use of the Kro’s kitchen garden and prioritizes local, fresh ingredients. By partnering with nearby farmers, like Torbin at Varde Ådal Lam, he’s able to see first-hand the care and love they put into every animal they raise. He finds this makes him appreciate his work even more.
